“I used a mixture of Hot Italian Sausage and Sweet Italian Sausage to give it a little more flavor and heat. What is nice about this recipe is that you can change the number of people that it serves so you can easily cut it in half. Which I ended up doing, but I did end up adding in more broth than what it called for. I just felt like there wasn’t enough liquid. But I will be making this again.”
Crockpot Carnitas
This is a go-to crockpot meal that is so easy and so delicious. The carnitas can be used in a variety of ways, and will taste great regardless of how you end up using it!

Chef Tips:
Sometimes I add a shot or 2 of Tequila with everything. There are always a bunch of leftovers and I have found that they freeze well. You will want to put leftovers in a freezer container, with some of the liquid and it will last for several months. To unfreeze, just put it in the refrigerator for a few hours and heat it back up in a skillet.
Corned Beef and Cabbage
This hearty recipe will leave you full and satisfied! Perfect to bring to an in-office St. Patrick’s Day lunch potluck as well.

I found this recipe in 2021 for Ryan’s Birthday. I was doing a Tiki theme! These ribs were delicious and I have made them a few times since. He has requested them again for his birthday this year. They are great paired with some coconut rice and dumplings.
